So interesting.<BR/><BR/>I make it Italian-style with my regular tomato sauce and lots of basil. The eggs are poached in the sauce with cubes of smoked Scamorza cheese added (or even regular mozzarella). No vegetables or spices added just a drizzle of good olive oil. The only thing wrong with this dish is that we can usually eat a whole crusty loaf of bread with it.
